The Aguilera family has been running the restaurant La Sociedad in the village Canillas de Aceituno in Spain’s Sierra Tejeda region since the 1950s. The restaurant specialises in tasty goat kid dishes with a blast of garlic. The son of the restaurant’s owner also offers “convenience goat kid” – the complete goat kid package for the home, ready to serve in just a short time – together with the company Chivo de Canillas.
These goats are raised on the tranquil outskirts of the village. The herds of goats graze primarily on what nature provides them, such as thyme and rosemary, supplemented by fresh hay. Selected goats are given only mother’s milk; they weigh between 4 and 4.5 kg after around 30 days. These goats are slaughtered humanely nearby, making the transport routes short and stress-free. Other types of animals such as cattle and pigs share a stall with these goats, and it’s very serene despite the end being near.
